Corn Fritters

Our church used to have progressive dinners. Now to those who don’t know..a progressive dinner means you drive from person to persons house for each separate course. So you might end up going to 4-5 different homes before you were finished eating. Yes, it IS a little odd but it really was a good way to get to know lots of different folks.

At one such dinner, a lady in our church by the name of Mrs. Foty, who btw was known as one of the BEST bakers in the church, made something called Corn Fritters. Well…. I loved them. My mom and I experimented till we came up with those wonderful fritters. So here they are..and you don’t even have to drive all over creation to get them.  <grins>

Corn Fritters

2 cups fresh or canned whole kernal
1 small can of creamed corn
2 eggs, beaten
1 cup flour
3/4 tsp
1/4 tsp pepper
1 tsp baking powder

Combine corn and eggs. Add flour which has
been sifted with the other dry ingredients. Drop corn mixture from a tablespoon into 1 inch of melted shortening. Fry till golden brown then flip to brown other side.
These are great for breakfasts, hors d’oeuvres or as a side dish.
Variations: Add bacon, cheese or veggies. Anything goes!
