Pennsylvania Dutch Funnel Cake


If you have ever journeyed to the Amish country in Pennsylvania and have never had their funnel cakes, you have missed a grand treat. I sometimes substitute good apple cider in the fall for some of the liquid for an appley taste.

Pennsylvania Dutch Funnel Cake

2 eggs
1 1/2 cups milk
2 cups
flour
1/2 cup cornmeal
1/4 cup sugar
1/2 t. salt
2 t. baking
powder
1/2 t. baking soda

Beat eggs and milk together.  In a separate bowl; combine rest of the ingredients.  Add dry ingreds. to the liquid.
Mix well until thin enough to run through a funnel.  Prepare oil in skillet.
Pour in batter in haphazard swirls and patterns. Let brown lightly on both sides.  Remove and dust with 10X sugar.

Doubled recipe:
4 eggs
3 cups
milk
4 cups flour
1 cup cornmeal
1/2 cup sugar
1 t. salt
4 t.
baking powder
1/4 t. baking soda
